Peach, rocket and pecan salad

A perfect summer salad for when fresh peaches are juicy and plentiful.

  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon white wine vinegar
  • 2 teaspoon dijon mustard
  • 2 teaspoon honey

  • 2 peaches, stones removed, cut into wedges
  • 150 gram wild rocket leaves
  • 1/2 cup toasted pecan halves
  • 80 gram goat's cheese

    In a large bowl, gently toss peaches, rocket leaves and pecans together. Top with broken up chunks of goat's cheese.

    DRESSING: In a small bowl, whisk all ingredients together. Season to taste.

    When ready to serve, drizzle dressing over salad.


Replace peaches with nectarines if preferred. If liked, add some crisp prosciutto - cook in a lightly oiled frying pan 1-2 minutes, turning once. Break up when cold and add to salad.
