Peach, pear and ginger smoothie with nut clusters
“It’s ugly but drinks like a dream” is what Nici Wickes tells people when she serves them this smoothie! Pair it with these nut clusters - they're quick to make and the two go well together

Ingredients
Peach, pear and ginger smoothie
- 1 cup water
- 1 pear
- 1 cup fresh peach chunks
- 2 tablespoon plain, unsweetened yoghurt (optional)
- 1/2 banana
- 1 tablespoon fresh ginger, finely grated
- handful of ice
Nut clusters
- 2 cup rice bubbles
- 2 tablespoon black chia seeds
- 1 tablespoon black sesame seeds
- 1 cup nuts and seeds (hazelnuts, almonds, sunflower seeds etc), chopped
- 1/4 cup honey
- 1 tablespoon coconut oil (or butter, if not dairy-free)
Method
Peach, pear and ginger smoothie
- 1Blend all the ingredients until smooth. Taste and add more ginger, if preferred. Serve chilled.
Nut clusters
- 2Preheat oven to 130°C. Line a tray with baking paper.
- 3In a large bowl, combine rice bubbles with chia, sesame and the other nuts and seeds.
- 4In a small saucepan, simmer the honey and coconut oil for 2-3 minutes or until it begins to thicken slightly. Pour it into the nut mix, stirring well to combine.
- 5Placed heaped tablespoons of the mix on the baking tray.
- 6Bake for 15 minutes. Cool.
- 7Keep crispy in an airtight container in fridge. Makes approx. 20.
Notes
- Remember to ‘chew’ your smoothie to get the important digestive enzymes activated in your mouth.
