Peach, pear and ginger smoothie with nut clusters

“It’s ugly but drinks like a dream” is what Nici Wickes tells people when she serves them this smoothie! Pair it with these nut clusters - they're quick to make and the two go well together

Peach, pear and ginger smoothie
  • 1 cup water
  • 1 pear
  • 1 cup fresh peach chunks
  • 2 tablespoon plain, unsweetened yoghurt (optional)
  • 1/2 banana
  • 1 tablespoon fresh ginger, finely grated
  • handful of ice
Nut clusters
  • 2 cup rice bubbles
  • 2 tablespoon black chia seeds
  • 1 tablespoon black sesame seeds
  • 1 cup nuts and seeds (hazelnuts, almonds, sunflower seeds etc), chopped
  • 1/4 cup honey
  • 1 tablespoon coconut oil (or butter, if not dairy-free)

    Blend all the ingredients until smooth. Taste and add more ginger, if preferred. Serve chilled.
Nut clusters

    Preheat oven to 130°C. Line a tray with baking paper.

    In a large bowl, combine rice bubbles with chia, sesame and the other nuts and seeds.

    In a small saucepan, simmer the honey and coconut oil for 2-3 minutes or until it begins to thicken slightly. Pour it into the nut mix, stirring well to combine.

    Placed heaped tablespoons of the mix on the baking tray.

    Bake for 15 minutes. Cool.

    Keep crispy in an airtight container in fridge. Makes approx. 20.


  • Remember to ‘chew’ your smoothie to get the important digestive enzymes activated in your mouth.
