Ingredients

Method

1.Preheat oven to hot, 200°C (180°C fan-forced). Line an oven tray with baking paper.
2.In a food processor, mix almond meal, sugar, egg, butter and vanilla to a smooth paste. Place one sheet of puff pastry on prepared tray. Spread with paste, leaving a 2cm edge. Cut 4 strips from remaining sheet for border, arrange around edge and brush with extra egg.
3.Spread peaches over almond paste. Sprinkle with almonds. Bake 15-20 minutes, until golden. Serve with cream or ice-cream.
