Peach galette

Sweet, juicy peaches are beautiful baked with crunchy almonds and a creamy, vanilla spread. Golden, crumbly pastry makes this beautiful dessert a winning dish.

Peach galette
  • 2/3 cup almond meal
  • 1/3 cup caster sugar
  • 1 egg, beaten, plus 1 extra
  • 40 gram softened butter
  • 1/4 teaspoon vanilla extract
  • 1 1/2 sheets puff pastry
  • 415 gram can peach slices, drained
  • 2 tablespoon flaked almonds
  • cream or ice-cream, to serve

    Preheat oven to hot, 200°C (180°C fan-forced). Line an oven tray with baking paper.

    In a food processor, mix almond meal, sugar, egg, butter and vanilla to a smooth paste. Place one sheet of puff pastry on prepared tray. Spread with paste, leaving a 2cm edge. Cut 4 strips from remaining sheet for border, arrange around edge and brush with extra egg.

    Spread peaches over almond paste. Sprinkle with almonds. Bake 15-20 minutes, until golden. Serve with cream or ice-cream.
