Peach and lime sorbet
Sweet, zesty and refreshing all in one scoop - this divine peach and lime sorbet is easy to make and perfect for a warm Summer afternoon.

Ingredients
Peach and lime sorbet
- 2 cup water
- 1 cup caster sugar
- 8 peaches, peeled, stoned, chopped
- 2 limes, juice
- 2 egg whites
Method
Peach and lime sorbet
- 1Combine water and sugar in a medium saucepan. Stir over low heat until sugar has dissolved. Bring to the boil on high. Reduce heat to low and simmer, without stirring, for 10 minutes. Remove from heat. Cool to room temperature.
- 2Place peaches and syrup in a food processor or blender. Process until pureed. Stir lime juice through.
- 3Pour into a large bowl or cake pan. Freeze for 3 hours, stirring occasionally with a fork.
- 4Spoon mixture into a food processor or blender. Add egg whites. Process until smooth. Return to pan and freeze until ready to serve. Serve in scoops.
Notes
To peel peaches, place in a large heatproof bowl. pour boiling water over them and stand for 10 seconds.Transfer to a bowl of iced water then peel away skin when cool.
