Pea, mint and roasted almond salad

This beautiful green salad tastes like a breath of fresh air. With the delicious summer flavours of mint and the homemade mustard cider dressing, this is a perfect side for your Christmas dinner.

Pea, mint and roasted almond salad
  • 150 gram snow peas, trimmed
  • 150 gram sugar snap peas, trimmed
  • 125 gram snow pea sprouts, trimmed
  • 1 cup loosely packed fresh mint leaves
  • 1/2 cup slivered almonds, roasted
  • 60 gram mixed salad leaves
Mustard and cider dressing
  • 2 tablespoon olive oil
  • 1 tablespoon cider vinegar
  • 2 teaspoon wholegrain mustard

    Cook snow peas and sugar snap peas in boiling salted water for about 2 minutes or until barely tender. Drain, then rinse under cold running water.

    Make mustard and cider dressing. Combine oil, vinegar and mustard in small bowl; season to taste.

    Combine peas, sprouts, mint, nuts and leaves in bowl. Add dressing. Toss gently.


Avoid buying nuts pre-toasted – you will save yourself money by toasting at home.
