Method

1.Preheat grill to medium-high. Bring a saucepan of salted water to the boil.
2.Cook pasta according to packet instructions. Drain well, reserve 2 tablespoons pasta water; return pasta to saucepan.
3.Place peas and spring onion in a large bowl. Cover with boiling water; leave 5 minutes, or until tender (it may take slightly longer for fresh peas).
4.Drain pea mixture well; place 2 cups in a blender or food processor with reserved pasta water, juice, cream, half of mint and most of parmesan. Puree on low speed until smooth. Season with salt and pepper; process to combine.
5.Place haloumi on tray; grill 5 minutes, turning once.
6.Stir pea sauce through pasta; warm over medium heat. Stir through remaining mint and peas. Spoon into serving bowls; top with haloumi and remaining parmesan.

For best results, cook pasta until ‘al dente’ – firm to the bite but not hard.
