Ingredients

Pavlovas with tamarillo
  • 5 egg whites
  • 1 1/3 cup (300g) caster sugar
  • 1 cup (250ml) cream
  • 1/2 teaspoon vanilla essence
  • 1/3 cup (55g) icing sugar
  • 12 tamarillos, peeled, quartered

Method

Pavlovas with tamarillo

    Preheat oven to 100°C. Line a baking tray with baking paper.

    Using an electric beater, beat egg whites until firm peaks form. Gradually add sugar and beat until thick and glossy.

    Spread mixture into 6 x 12cm rounds on prepared tray. Shape pavlovas with a spatula. Bake for 1 hour. Cool on a wire rack.

    Whip cream until firm and stir in vanilla and icing sugar. Spread onto pavlovas and top with tamarillo wedges. Serve.
