Ingredients

Pasta with pumpkin, spinach and goat's cheese
  • 400 gram bavette or linguine
  • 2 tablespoon olive oil
  • 250 gram pumpkin, peeled, seeded, diced
  • 1 red onion, coarsely chopped
  • 1 clove garlic, crushed
  • 1 birdseye chilli, seeded, finely sliced
  • 100 gram baby spinach
  • 120 gram goat's cheese, crumbled

Method

    Cook pasta in a saucepan of boiling, salted water according to packet directions. Drain, reserving 1 cup of cooking liquid.

    Meanwhile, heat half of oil in a large saucepan on medium heat. Cook pumpkin, covered, 10 minutes, shaking pan frequently, until tender and lightly golden.

    Add onion, garlic and chilli and cook, 2 minutes, stirring, until fragrant. Add spinach, half of goat's cheese, cooked pasta and reserved cooking liquid, toss to combine. Serve topped with remaining goat's cheese and season with pepper, if you like.
