1.Cook pasta in a saucepan of boiling, salted water according to packet directions. Drain, reserving 1 cup of cooking liquid.
2.Meanwhile, heat half of oil in a large saucepan on medium heat. Cook pumpkin, covered, 10 minutes, shaking pan frequently, until tender and lightly golden.
3.Add onion, garlic and chilli and cook, 2 minutes, stirring, until fragrant. Add spinach, half of goat’s cheese, cooked pasta and reserved cooking liquid, toss to combine. Serve topped with remaining goat’s cheese and season with pepper, if you like.
