Pasta salad

Pasta salad is the perfect dish for a light lunch or family barbecue. With minimal ingredients needed, this fragrant and scrumptious pasta salad is sure to be a crowd pleaser.

Pasta salad
  • 5 cup cooked spiral pasta
  • 250 gram punnet cherry tomatoes, quartered
  • 1 red capsicum, seeded, chopped
  • 1/2 barbecued chicken, meat shredded
  • 1/2 cup roughly chopped parsley
  • 3 slices salami or prosciutto, cooked, chopped
  • 2 green onions, finely sliced
  • 1 tablespoon olive oil
  • 2 teaspoon white wine vinegar
  • 1 teaspoon dijon mustard

    In a large bowl, combine pasta, tomatoes, capsicum, chicken, parsley, salami and onions.

    In a jug, whisk all dressing ingredients together with a fork.

    Pour dressing over salad and season to taste. Toss well.
