Ingredients

Passionfruit and lime souffle‚
  • cooking oil spray
  • 1 tablespoon caster sugar
  • 600 millilitre low-fat custard
  • 170 gram can passionfruit (see tip)
  • 1/4 cup (40g) icing sugar, sifted
  • 1 lime (or lemon), finely grated rind of
  • 4 eggwhites

Method

    Preheat oven to 190°C. Spray 6 x 1-cup souffle‚ dishes with oil. Arrange on a baking tray. Sprinkle evenly with sugar.

    In a large bowl, combine custard, passionfruit, sugar and rind.

    In a clean bowl, beat eggwhites with an electric mixer until firm peaks form. Fold lightly into custard mixture.

    Spoon mixture carefully into prepared dishes. Bake for 10-15 minutes, until puffed. Serve immediately.

Notes

Use pulp of 3-4 fresh passionfruit when passionfruit is in season.
