Passionfruit and lime souffle‚
1.Preheat oven to 190°C. Spray 6 x 1-cup souffle‚ dishes with oil. Arrange on a baking tray. Sprinkle evenly with sugar.
2.In a large bowl, combine custard, passionfruit, sugar and rind.
3.In a clean bowl, beat eggwhites with an electric mixer until firm peaks form. Fold lightly into custard mixture.
4.Spoon mixture carefully into prepared dishes. Bake for 10-15 minutes, until puffed. Serve immediately.
Use pulp of 3-4 fresh passionfruit when passionfruit is in season.
Note
