Method
1.Preheat the oven to 200°C.
2.Chop potatoes into chunks, roughly 3cm in diameter. Pat dry with paper towels.
3.Mix the butter, garlic and olive oil together in a small bowl.
4.Arrange potatoes in a single layer in a large roasting dish.
5.Drizzle over the garlic butter mixture and toss to coat.
6.Bake for 40 minutes or until the potatoes are golden and cooked through.
7.Remove the dish from the oven a few minutes before the end of cooking.
8.Sprinkle potatoes with rosemary, cheese and season with salt and pepper. Return pan to the oven. Cook for 5 minutes until the cheese is melted and golden brown. Serve at once.
