Method

1.Dust fish pieces in flour, shaking off excess. Dip into egg and coat in combined crumbs, parmesan and parsley. Chill 15 minutes.
2.Heat oil in a large, deep frying pan on high until a cube of bread sizzles as soon as it is added. Fry fish pieces, in 2 batches, for 1-2 minutes each side, until golden and cooked through. Drain on paper towel. Serve with tartare sauce and lemon wedges.
