Method

Pancake stack with manuka honey

1.Sift flour, baking powder and baking soda and salt into a mixing bowl and whisk to combine.
2.Beat the eggs and sugar, plus one of the tablespoons of honey, in another bowl until thick and pale.
3.Make a well in the dry ingredients and add the egg mixture, along with the buttermilk. Whisk together until smooth.
4.Heat a large non-stick frypan over a low heat. Add a small knob of butter to the pan, swirl then pour out into a small dish.
5.Add about 2 tablespoons of the mixture to the pan and cook until bubbles appear on the surface, about a minute. Flip over and cook the other side until golden.
6.Place remaining honey into a bowl and combine with the sour cream.
7.Serve pancakes with lashings of the honey and sour cream mixture. Drizzle with honey and dust with icing sugar, before garnishing with apple slices.

Hokey pokey

8.Place the sugar and golden syrup into a saucepan and gently heat to dissolve.
9.Butter a dish to pour the mixture into and set aside.
10.Increase the heat to a boil and cook mixture for 2 minutes. Stir every now and then to prevent it from sticking. Remove from the heat.
11.Add baking soda and stir until the mixture begins to froth. Pour into dish and leave until cool. Break into pieces.
  • To make buttermilk, place 2 cups full cream milk into a bowl and add the juice of half a lemon. Gently combine and watch it curdle. – PER SERVE: Energy: 765kcal, 3200kj Protein: 20g Fat: 21g Saturated fat: 12g Cholesterol: 191mg Carbohydrate: 125g Fibre: 4g Sodium: 2132mg
