Pan-fried haloumi with papaya, lemon and prosciutto

This is all about playing favourites. Papaya’s sweet fruitiness finds a plate-mate with prosciutto. Lemon washes away the saltiness of haloumi and mint adds a fresh top note. Every harmonious mouthful seems better than the last. Simply moreish.

Method

1.Peel papaya (easiest done before it is cut in half), remove seeds and cut flesh into thin slices. Arrange on 4 plates.
2.Mop haloumi with paper towels, then cut into 12 slices. Heat a non-stick or heavy-based frying pan over medium heat and drop in butter. Once it is sizzling, add haloumi, and cook on both sides until golden. Transfer to a plate, then, when all the haloumi is cooked, divide among the plates.
3.Add lemon juice to pan (it will hiss), toss in mint, then pour sizzling over haloumi. Top each with a piece of prosciutto and serve immediately.
