Pan-fried fish with softened leeks

Method

1.Pat fish fillets dry. Dredge in a light dusting of flour, seasoned with salt, lemon zest and oregano. Set aside.
2.In a large pan, heat the oil to a low-medium temperature. Cook the leeks slowly until they are soft and lightly coloured – about 10 minutes.
3.Add the zucchini ribbons and lightly cook these with the leeks for 5 minutes. Remove from the pan and keep warm.
4.Heat the second measure of butter and olive oil in the pan. Add the floured fish fillets and cook until golden.
5.Flip the fish and cook for another 2-3 minutes until it is just cooked through – remember fish takes only a little time to cook and it will keep cooking once you take it off the heat.
6.To serve, add the cooked leeks and zucchini back into the pan and present it to the table. Season to taste and garnish with wedges of lemon.
