Paleo brazil nut bars with carob, dates & orange zest
Forget sugar-laden shop-bought muesli bars. These rich but healthy fruit and nut-filled treats make for an energising snack.

Brazil nut bars with carob, dates & orange zest
- 1 cup brazil nuts
- 1 cup medjool dates, pitted
- 1/2 cup carob, cocoa or cacao powder, plus extra for dusting (optional)
- 1 orange, grated zest
- 1/2 orange, juice
Method
Brazil nut bars with carob, dates & orange zest
- 1Put brazil nuts in a food processor and process into a dense flour. Add the remaining ingredients, and continue to process until the mixtures starts to come together like a dough.
- 2Press the mixture evenly in to a lined slice tin, and then place in the fridge or freezer to set for at least 1 hour.
- 3Slice into bars, and then dust with a little extra carob if desired. The bars can be kept at room temperature, but I find they are best kept in the fridge.
