Paleo apple, cinnamon and coconut slice

This delicious Paleo-friendly apple, cinnamon and coconut slice recipe is incredibly easy to make and packed with plenty of natural ingredients. Enjoy for a morning or afternoon pick-me-up snack

Ingredients

  • 1 1/2 cup sunflower seeds
  • 3/4 cup raisins
  • 1 tablespoon cacao powder
  • 5 medium apples, peeled, cored, diced
  • 3/4 cup honey
  • 1/4 cup currants
  • 1/4 cup coconut flour
  • juice of 1/2 lemon
  • 2 teaspoon cinnamon
  • 1/4 cup shredded coconut

Method

    Preheat oven to moderate, 180°C. Grease and line a 15 x 25cm slice pan.

    Process seeds, raisins and cacao until they bind together. Spread evenly over the base of pan.

    In a large bowl, combine apples, honey, currants, flour, juice and cinnamon. Spread evenly over base and sprinkle with coconut. Bake for 20 minutes until golden.
