Ingredients

Method

1.In a medium bowl, using an electric mixer, beat butter until pale and creamy. Beat in all ingredients, except oysters. Season.
2.Layer 2 sheets plastic wrap on a clean work surface. Spoon butter lengthways along plastic. Roll up to form a 3cm thick log, twisting ends to seal. Chill until required.
3.Preheat a barbecue plate to medium. Unwrap butter and slice thinly. Top each oyster with half a slice. Place shells on barbecue (butter side up). Cook 2-4 minutes, until butter bubbles and oysters are slightly cooked.

Keep any leftover butter mixture in the freezer for a quick and simple way to add flavour to steaks. seafood or vegetables.
