Overnight apple oats
Oats are the perfect way to start the day – they’re super-nutritious while also being a slow-release carbohydrate to sustain you throughout the morning. Plus, this overnight apple oats recipe is so delicious!

Ingredients
- 1 cup whole rolled oats
- 2 tbsp chia seeds
- 1/2 cup long thread coconut (or 1/4 cup desiccated)
- 1/4 cup good-quality, pure apple juice
- 1 1/2 cups non-dairy milk, ie almond or coconut milk
- 2 apples (1 grated, 1 sliced), I use Pink Lady or Fuji as they don't brown easily
- 1/4 cup pumpkin seeds, roasted
- 1/2 cup blueberries, fresh or frozen
- honey, for drizzling
Method
- 1In a bowl, mix together the oats, chia seeds and coconut. Pour over the apple juice and milk, giving it a good stir. Cover and refrigerate overnight.
- 2To serve, spoon the oats into bowls, mix in the grated apple, then top with the sliced apple, pumpkin seeds and blueberries. Enjoy with a drizzle of honey.
Notes
For good gut and overall health, we should aim to eat at least 20g of fibre per day. But what does this look like? Well, a 1/2 cup of oats will provide nearly 10g; a decent-sized apple 5g; 1 tbsp of chia seeds is also 5g; and the pumpkin seeds and blueberries are an added bonus! This recipe keeps well for about 4-5 days.
