Oven-baked lamb sausages, beans & tomatoes
- 8 thick lamb sausages (700g)
- 2 large zucchini (300g), coarsely chopped
- 1 medium red capsicum (200g), coarsely chopped
- 400 gram canned diced tomatoes
- 400 gram canned cannellini beans, drained and rinsed
- 1/2 cup loosely packed fresh basil leaves
Method
Oven-baked lamb sausages, beans & tomatoes
- 1Preheat oven to 200°/400°F. Cook lamb sausages in a flameproof dish over medium heat until browned all over. Add zucchini, red capsicum and tomatoes.
- 2Cover; bake in oven for 40 minutes or until sausages are cooked through. Uncover dish, add cannellini beans; bake 10 minutes or until beans are heated through. Remove dish from oven; slice sausages thickly. Serve sausage mixture topped with fresh basil leaves.
