Orange patty cakes
Butterfly cakes are a classic plate at kids' parties. This recipe updates a simple packet cake mix with orange zest, and the little cakes are topped with strawberries for a special finish.

- 1 quantity basic melt'n'mix cake
- 1 teaspoon finely grated orange zest
- 1/2 cup freshly squeezed orange juice
- 1/2 cup cream, whipped
- 6 small strawberries, quartered
Method

- 1Preheat oven to 180°C/160°C fan-forced. Line a 12-hole (1/3-cup) muffin tray with paper cases. Make Basic Melt'n'Mix Cake, using orange zest instead of essence and orange juice instead of milk.
- 2Divide mixture among paper cases. Bake for 20 minutes or until a skewer inserted at centre comes out clean. Cool in tray for 5 minutes. Transfer patties to a wire rack to cool completely.
- 3Use a small sharp knife to cut out a cavity in top of each patty cake. Fill cavity with cream, then top with strawberry. Serve.
Notes
You can bake patty cakes one day ahead. Store in an airtight container. Just before serving, fill with cream and top with strawberry. To make plain butterfly cakes, omit the strawberries and use the cut-out piece of cake (cut in half) to make wings. You can use lemon zest and juice instead of orange.
