Orange honey chicken wings
  • 12 chicken wings
  • 2 teaspoon finely grated orange zest
  • 1/4 cup freshly squeezed orange juice
  • 2 tablespoon honey
  • 2 teaspoon soy sauce
  • 2 teaspoon vegetable or olive oil
  • 1 medium carrot, cut into matchsticks
  • 1 medium zucchini, cut into matchsticks
  • 2 celery sticks, sliced
  • 227 gram can bamboo shoots, drained
  • 1 cup bean sprouts, rinsed

    Preheat oven to 180°C (160°C fan-forced). Combine chicken, zest, juice, honey and soy sauce in a large glass or ceramic dish. Cover with plastic food wrap then chill for 10 minutes to marinate.

    Arrange chicken, in a single layer, in a large roasting pan. Discard remaining marinade. Bake, turning chicken during cooking, for 40 minutes or until browned and cooked.

    Meanwhile, heat a wok or large frying pan over high heat. Add oil; swirl to coat surface. Stir-fry carrot, zucchini and celery for 5 minutes or until tender. Add bamboo shoots and sprouts; stir-fry for 2 minutes or until heated. Serve chicken with stir-fried vegetables.
