Method

1.Slice meat from chicken; discarding skin. Combine chicken, salad leaves, asparagus, and mint.
2.In a jug, whisk orange juice, mustard, olive oil, red wine vinegar. Season to taste. Toss dressing through salad. Top with prosciutto.
