Orange and lime delicious pudding

It’s a classic for a reason, but I love this version that’s crammed full of orange and lime instead of lemon. All it takes is one bite, and you’ll never look back! Whip it up for a gorgeous citrus-spiked dessert.

Ingredients

Method

1.Preheat oven to 170°C.
2.In a bowl, combine the sugar and butter, beating until pale. Add the egg yolks, flour, baking powder and salt, and beat with an electric mixer on low until combined, then stir in the milk, juice and zest.
3.In another bowl, beat the egg whites on high speed until stiff peaks form. Gently fold the egg whites into the batter. Pour into a medium-sized greased ovenproof dish. Bake for 40 minutes or until golden on top.
4.Serve warm with cream or ice cream.

If you fancy it, add a sprinkle (2-3 tbsp) of coconut to the batter for an added tropical taste and texture.
