Method

1.Prepare basic cake mixture (recipe below). Lightly grease an eight-cup pudding basin and line base with a small round of baking paper.
2.Spoon mixture into basin, smoothing the top. Cover with a layer of baking paper and foil. Secure with lid or kitchen string.
3.Place pudding in a large saucepan carefully, with enough boiling water to come halfway up the sides of the basin. Bring to the boil, covered, on medium.
4.Cook for 4-4 ½ hours until a skewer inserted into the middle comes out clean. Set aside for 10 minutes. Remove lid and turn out pudding.
5.In a small saucepan, bring orange marmalade and water to a simmer, stirring. Cool.
6.Drizzle over pudding and top with extra chopped chocolate and grated orange zest. Serve with custard or cream.
