Orange and dark chocolate Christmas pudding

Nothing tastes like the festive season quite like a decadent Christmas pudding. This orange and dark chocolate version is perfect served with your choice of creamy custard or ice cream

  • basic cake mix (see recipe below)
  • 1/2 cup orange marmalade
  • 1 tablespoon water
  • extra chopped dark chocolate
  • grated orange zest
  • custard or cream, to serve (optional)

    Prepare basic cake mixture (recipe below). Lightly grease an eight-cup pudding basin and line base with a small round of baking paper.

    Spoon mixture into basin, smoothing the top. Cover with a layer of baking paper and foil. Secure with lid or kitchen string.

    Place pudding in a large saucepan carefully, with enough boiling water to come halfway up the sides of the basin. Bring to the boil, covered, on medium.

    Cook for 4-4 ½ hours until a skewer inserted into the middle comes out clean. Set aside for 10 minutes. Remove lid and turn out pudding.

    In a small saucepan, bring orange marmalade and water to a simmer, stirring. Cool.

    Drizzle over pudding and top with extra chopped chocolate and grated orange zest. Serve with custard or cream.
