Ingredients

One-pan sausage bake
  • 12 chipolata sausages
  • 1 sliced into wedges red onion
  • 4 cloves, skin on garlic
  • 2 tablespoon olive oil
  • 400 gram can, drained cannellini beans
  • 4 quartered tomatoes
  • 1 chopped zucchini
  • 1/2 teaspoon dried chilli flakes
  • 1 halved lemon
  • 1/4 cup white wine
  • basil, salad leaves, to serve

Method

One-pan sausage bake
  • 1
    Preheat oven to hot, 200°C.
  • 2
    Combine sausages, onion and garlic in pan.Toss with half oil and arrange in single layer in pan. Bake 10 minutes.

    Turn sausages over. Add beans, tomatoes, zucchini and chilli flakes. Drizzle with remaining oil and season to taste. Add lemon halves. Bake a further 10-15 minutes, until sausages are cooked through.

    Pour wine into hot pan and allow to bubble. Squeeze juice from baked lemon halves over. Scatter with basil. Serve with salad.

Notes

Serve with crusty bread for mopping up pan juices.
