Oaty breakfast bars
These scrumptious oaty breakfast bars are the perfect morning meal for people with busy schedules! Make a batch in the weekend so you can grab and go each morning - it couldn't be easier.

Ingredients
- 1 3/4 cups medium rolled oats
- 1/2 cup bran
- 3/4 cup desiccated coconut
- 1/4 cup whole linseeds
- 1/4 cup pumpkin seeds
- 1 tsp cinnamon
- 1/2 cup raisins or other dried fruit
- 120 g coconut oil
- 1 cup coconut sugar
- 1 egg
Method
- 1Preheat the oven to 180°C. Line a slice or brownie tin with baking paper.
- 2In a large bowl combine dry ingredients (except coconut sugar) and toss together.
- 3Melt the coconut oil, stir the coconut sugar into it then whisk in the egg.
- 4Make a well in the centre of the dry ingredients and stir in the egg mixture. Mix thoroughly and spoon into the lined tin, pressing it in firmly with the back of a spoon.
- 5Bake for 20-25 minutes or until golden brown. Allow to cool for 15 minutes before cutting.
- 6Serve with yoghurt and fresh fruit or eat on the run.
