Method

1.Preheat oven to 180°C/160°C fan-forced. Line two baking trays with baking paper.
2.Using a wooden spoon, beat dairy spread and sugar in a medium bowl until combined. Add egg and essence; beat until combined.
3.Add cranberries, oats, flour and chocolate to egg mixture; mix until combined. Spoon tablespoon measures onto prepared trays; flatten slightly. Bake 12-15 minutes or until golden. Remove from oven. Cool on trays (cookies will firm). Serve.

Don’t beat spread too long or dough will spread during baking.
