1.Preheat oven to 100°C. Combine oats and boiling water in a bowl and stand for 5 minutes. Whisk in egg. Sift flour and baking powder together, then mix into oat mixture with sugar. Stir in milk and melted butter, followed by apples and pecans.
2.Melt extra butter in a non-stick frying pan on medium heat. When butter foam subsides, add 1/3-cup measures of batter, leaving space between each pancake. Cook for 2-3 minutes, until bottom is golden and bubbles start to appear on top, then turn and cook other side for 1-2 minutes, until golden. Transfer to a large plate and keep warm in oven.
3.Repeat with remaining batter, using a little more butter, if necessary. Serve with knobs of butter and maple syrup.
