Nut crunch slice

Ingredients

Icing
  • 1 cup icing sugar, sifted
  • 2 tablespoon cocoa powder, sifted
  • 1 tablespoon milk, warmed
  • 1 teaspoon vanilla extract
Nut crunch slice
  • 150 gram butter or margarine, chopped
  • 1/2 cup caster sugar
  • 1 egg, lightly beaten
  • 1 teaspoon vanilla extract
  • 250 gram packet morning coffee biscuits, finely crushed
  • 1/2 cup crushed nuts
  • 1/4 cup cocoa powder, sifted

Method

Nut crunch slice
  • 1
    Lightly grease a 20cm square cake pan.

    Melt butter in a small saucepan. Stir in sugar and egg over low heat, until sugar dissolves and mixture begins to thicken. Add vanilla and set aside to cool slightly.

    In a bowl, combine crushed biscuits, 1/3 cup nuts and cocoa. Stir in cooled butter mixture until well combined. Press firmly into pan. Chill until firm.

    To make Icing; in a small bowl, combine all ingredients. Drizzle over slice. Sprinkle with remaining nuts. Chill until firm.
