No-cook oatmeal balls

Ingredients

  • 1 cup oat bran
  • 1/2 cup light peanut butter
  • 1/3 cup linseeds
  • 1 cup desiccated coconut
  • 1/3 cup honey
  • 1/4 cup water
  • 1 teaspoon vanilla extract

Method

    Combine ingredients in a large bowl; refrigerate for 30 minutes.

    Using damp hands, roll heaped tablespoons of the mixture into balls. Refrigerate or freeze until firm.

You can make these ahead of time and store them in the fridge for up to 2 weeks, or freeze for up to 3 months.
