Method

Ginger slice

1.Process the nuts, dates, coconut oil and ground ginger until well combined. The mixture should hold together when you pinch it between your fingers.
2.Press into a sandwich tin lined with baking paper. Place in the fridge to set.

Icing

3.To make the icing, blend the coconut oil, honey, cashew butter and ground ginger until smooth, then pour over the base and smooth out with a wet knife or spatula.
4.Put in the fridge or freezer to set, then slice up. Store in an airtight container in the fridge until ready to serve.
