No-bake plum, berry and goat’s cheese cream pie

In this Nici Wickes pie recipe, a sweet biscuit crust is filled with tangy goat’s cheese and soft whipped cream, then piled up with handfuls of chopped plums and berries. It’s a truly fabulous dessert!

Method

1.Grease a springform tin, then line the bottom and sides with baking paper.
2.Blitz the biscuits in a food processor until a fine crumb forms. Pour in the melted butter and pulse to mix. Tip half the mixture into the base of the tin, press firmly to create an even layer. Use the remaining mix to press into the sides to form a 5-6cm rim. Chill for 30 minutes or overnight.
3.Wipe out the food processor. Put in the goat’s cheese and 2-3 tbsp cream, then blitz to form a smooth paste. Add a further 1-2 tbsp cream until spreadable. Spread over the biscuit base.
4.When ready to serve, softly whip the remaining cream with the icing sugar, then scrape into the pie shell. Pile on the fruit, then dust with icing sugar and enjoy!
