No-bake chocolate, mint and kiwifruit log (gluten-free and dairy-free)

This no-bake chocolate log recipe manages to create a gluten, dairy and refined sugar-free treat that's delicious to boot! Serve in thick slices for a sweet snack or dessert that's perfect for sharing

Ingredients

Method

1.Place all ingredients, except dried kiwifruit and goji berries, in food processor and blend until they form a sticky mixture. Scrape into a bowl and stir in dried kiwifruit and goji berries.
2.Spread out a piece of plastic wrap or beeswax food wrap. Add mixture to centre and wrap and shape into a squarish log about 20cm x 10cm. Or press wrapped mixture into a small loaf tin if you wish.
3.Chill for 2 hours then cut into roughly 1cm-thick slices. Store in an airtight container in the fridge.
  • Makes 12-16 slices.
