Neopolitan sandwich cookie

This stunning recipe sees pink and white cookies sandwiched together with a chocolate butter icing to create these Neopolitan sandwich cookies. Serve as the perfect high tea treat

Method

1.Preheat oven to 180°C. Line 2 baking trays with baking paper.
2.Combine butter, sugar, egg and vanilla extract in a bowl and beat with an electric mixer until pale and creamy, scraping down the sides of the bowl occasionally.
3.Add flour and salt and beat at low speed until well mixed. Divide dough in half; tint one half with pink food colouring.
4.Insert a large star nozzle tip into a pastry bag. Fill piping bag with the plain cookie dough. Pipe rosettes onto a baking tray. Next, fill the piping bag with pink cookie dough and pipe rosettes onto the next baking tray.
5.Bake for 10-12 minutes, or until firm and slightly golden around the edges. Remove to a wire rack to cool completely.
6.Make the chocolate butter icing (see below). Fill the clean piping bag with the icing. Pipe rosettes of icing onto white cookies and sandwich together with the pink cookies to give a neapolitan effect.

7.Beat butter and icing sugar together in a bowl. Add cocoa and boiling water and beat until thick and creamy.
