Nectarine and cardamom muffins
This muffin recipe is a one-bowl wonder, easy to throw together and the cardamom is a beautiful whisper of flavour alongside the fruit. And who doesn’t like a freshly baked muffin first thing in the morning? My mum’s muffins are the best – though I might be a bit biased!

Ingredients
Nectarine and cardamom muffins
- 125 gram butter, softened
- 1 cup sugar
- 2 eggs
- 1 cup natural yoghurt
- 1 teaspoon baking soda
- 2 cup flour
- 1 teaspoon cardamom
- 6 unpeeled nectarines, roughly chopped
- butter (optional), to serve
Method
Nectarine and cardamom muffins
- 1Preheat oven to 180°C. Grease a 12-hole muffin tin.
- 2Cream the butter and sugar until pale, then beat in the eggs. Spoon or pour the yoghurt into the centre of the mixture, then add the baking soda and stir it in (it will froth up!).
- 3Gently stir in the flour and cardamom, followed by the nectarines.
- 4Spoon into the muffin tins and bake for approximately 15-20 minutes or until they spring back when lightly touched.
- 5Dust the muffins with icing sugar. Enjoy with or without butter.
Notes
These muffins are delicious made with any fresh fruit - plums, peaches, blueberries or apple slices.
