Ingredients
Mustard chicken
- 4 chicken maryland pieces
- 60 gram butter, melted
- 1 tablespoon dijon mustard
- 3 tablespoon olive oil
- 1 tablespoon honey
- 2 clove garlic, crushed
- 2 parsnips, sliced
- 1 tablespoon maple syrup
- spinach salad, to serve
Method
Mustard chicken
- 1Preheat oven to hot, 200°C. Line a baking dish with foil or baking paper.
- 2Arrange chicken pieces in a single layer in prepared dish.
- 3In a bowl, combine butter, mustard, 1 tablespoon olive oil, honey and garlic. Brush liberally over chicken.
- 4Bake chicken 25-30 minutes, turning once, until cooked through.
- 5Meanwhile, in a bowl, toss together parsnips, remaining olive oil and maple syrup. Cook in a frying pan over low heat 10-15 minutes, until parsnips are golden and tender.
- 6Serve chicken with parsnips and spinach salad.
