Mushrooms stuffed with buttered crumbs and capers
Mushrooms or tomatoes work well with this dish for a simple side or entrée.

Mushrooms stuffed with buttered crumbs and capers
- 2 tablespoon flat-leaf parsley
- 1 tablespoon chopped basil, or more
- 2 clove garlic, crushed
- 1/4 teaspoon chilli flakes (optional)
- 1 tablespoon capers, drained, rinsed and drained
- 1/2 cup panko breadcrumbs
- 6 tablespoon extra-virgin olive oil
- 1/4 teaspoon salt
- 12 flat mushrooms
- 2 tablespoon freshly grated parmesan cheese
Method
Mushrooms stuffed with buttered crumbs and capers
- 1In a bowl, mix together the parsley, basil, garlic, chilli flakes (if using), capers, panko crumbs and 4 tablespoons of the oil. Season with salt and a little pepper if not using chilli.
- 2Wipe mushrooms with a damp cloth on the outside of the caps and trim the stalks. Put mushrooms, cap side down, in a shallow ovenproof dish. Sprinkle mushrooms with a little salt, then spoon on the topping. Sprinkle the parmesan cheese over and drizzle with remaining oil.
- 3Bake for 10-12 minutes in an oven preheated to 200°C (fan forced).
