Mushroom burgers

You won't miss the meat with these juicy mushroom burgers served with fries.

Mushroom burgers
  • 4 flat mushrooms (or 8 smaller ones), trimmed
  • 2 roma tomatoes, halved
  • 4 bread rolls, halved, toasted
  • 1 red onion, thinly sliced
  • 60 gram baby rocket leaves

    Preheat oven to 180°C. Lightly grease an oven tray.

    Arrange mushrooms and tomatoes on prepared tray. Drizzle with oil and bake for 15-20 minutes, until beginning to soften.

    Place a mushroom and tomato on one half of each roll. Finish with red onion and rocket. Serve with chips, if liked.


Optional: drizzle mushrooms with balsamic vinegar while baking.
