Ingredients

Method

1.Preheat oven to 180°C. Line a baking tray with baking paper.
2.In a bowl, cream the butter and sugar with a hand beater. Add the egg and beat for 1 minute. Stir in the flour and baking powder.
3.Use a rolling pin to roughly crush 2 packets of the eggs, then stir/knead into dough.
4.Roll into golf ball-sized rounds and spread out evenly on the tray, allowing 2cm between each as they’ll spread. Flatten slightly and press any remaining whole eggs into tops of each.
5.Bake for 7 minutes, then bring the tray out of the oven and bang it a few times on the benchtop to deflate the cookies (this gives them a lovely chewy texture). Return to the oven for a further 5-6 minutes or until golden.
6.Cool on the tray for 5 minutes, then transfer to a wire rack to cool completely.
