Method
1.Sprinkle lamb cutlet racks with Moroccan seasoning. Bake in a moderate 180°C oven for 30-40 minutes or until cooked to your liking.
2.Rest for 10 minutes.
3.Cut watermelon flesh into small cubes. Toss with feta, red onion and fresh mint leaves.
4.Cut lamb racks into cutlets and serve with watermelon salad.
