Moroccan lamb and watermelon salad
This Moroccan lamb recipe is a match made in flavour heaven! Sweet watermelon, salty feta and tender lamb cutlets come together to create a refreshing summer salad

Ingredients
- 2 x 6 lamb cutlet racks
- 1 tablespoon Moroccan seasoning
- 650 gram watermelon flesh
- 150 gram cubed feta
- 1/2 thinly sliced red onion
- 1/3 cup fresh mint leaves
Method
- 1Sprinkle lamb cutlet racks with Moroccan seasoning. Bake in a moderate 180°C oven for 30-40 minutes or until cooked to your liking.
- 2Rest for 10 minutes.
- 3Cut watermelon flesh into small cubes. Toss with feta, red onion and fresh mint leaves.
- 4Cut lamb racks into cutlets and serve with watermelon salad.
