Moroccan lamb and watermelon salad

This Moroccan lamb recipe is a match made in flavour heaven! Sweet watermelon, salty feta and tender lamb cutlets come together to create a refreshing summer salad

Ingredients

  • 2 x 6 lamb cutlet racks
  • 1 tablespoon Moroccan seasoning
  • 650 gram watermelon flesh
  • 150 gram cubed feta
  • 1/2 thinly sliced red onion
  • 1/3 cup fresh mint leaves

Method

    Sprinkle lamb cutlet racks with Moroccan seasoning. Bake in a moderate 180°C oven for 30-40 minutes or until cooked to your liking.

    Rest for 10 minutes.

    Cut watermelon flesh into small cubes. Toss with feta, red onion and fresh mint leaves.

    Cut lamb racks into cutlets and serve with watermelon salad.
