Molten caramel puddings
  • 2 380g cans top 'n' fill caramel
  • 250 gram chopped white chocolate
  • 100 gram chopped butter
  • 4 eggs
  • 1/4 cup caster sugar
  • 1 cup sifted plain flour
  • ice-cream or cream, to serve

    Preheat oven to hot, 200°C. Lightly grease 8 x 3/4-cup ramekins. Arrange on an oven tray.

    In a medium saucepan, combine caramel, chocolate and butter. Stir on low heat, until melted and smooth. Allow to cool.

    In a bowl, using an electric mixer, beat eggs and sugar together until pale and thick. Beat in caramel mixture. Fold in flour.

    Pour mixture evenly among ramekins until 1cm from top. Chill until ready to bake.

    Bake 15-20 minutes, until slightly puffed and golden. Serve hot with ice-cream or cream.
