Moist apple walnut slice with maple syrup icing
- 3 (450g) apples, peeled, coarsely grated
- 1 cup (150g) potato flour
- 3/4 cup (120g) brown rice flour
- 1/4 cup (30g) ground walnuts
- 1 cup (220g) caster sugar
- 1 teaspoon bicarbonate of soda
- 4 eggs, lightly beaten
- 1 cup (250ml) vegetable oil
- 1/2 cup (55g) coarsely chopped walnuts
- 1 1/2 cup (240g) pure icing sugar
- 1 1/2 tablespoon hot water
- 1 tablespoon maple syrup
Method
Moist apple walnut slice with maple syrup icing
- 1Preheat oven to 180°C (160°C fan-forced). Grease a 19cm x 30cm lamington pan; line base with baking paper, extending paper 5cm over two long sides.
- 2Sift dry ingredients into large bowl; stir in apple, eggs and oil. Pour mixture into pan and bake about 40 minutes. Stand slice in pan 10 minutes before turning, top-side up, onto wire rack to cool.
- 3To make maple syrup icing, sift icing sugar into small bowl; stir in the hot water and maple syrup.
- 4Spread slice with icing and sprinkle with chopped walnuts.
Notes
To ground walnuts, blend or process until fine.
