Mocha ice cream
Consider this your mid-afternoon wake-up call! A velvety chocolate ice cream laced with coffee.

Ingredients
Mocha icecream
- 1/3 cup just-boiled water
- 2 teaspoon instant coffee powder
- 2 cup milk
- 300 millilitre thickened cream
- 5 egg yolks
- 1/2 cup caster sugar
- 1 tablespoon custard powder
- 75 gram dark chocolate, chopped
Method
Mocha icecream
- 1In a small jug, combine water and coffee, stirringto dissolve.
- 2In a medium saucepan, combine milk and cream. Bring to boiling point on high. Remove from heat.
- 3In a medium bowl, using an electric mixer, beat yolks, sugar and custard powder together until thick. Gradually beat in milk and coffee mixtures until smooth.
- 4Return mixture to clean saucepan. Stir over low heat for 2-3 minutes until custard boils and thickens. Reduce heat. Simmer for 3 minutes. Add chocolate and stir until mixture is smooth. Remove from heat. Cover surface with plastic wrap to prevent a skin forming. Cool to room temperature. Chill until cold.
- 5Transfer custard to ice-cream maker and churn. Pour into loaf pan, cover with foil and freeze.
Notes
✦ If preferred, use white chocolate and 1/3 cup toasted nuts of choice, or crumble in cookies or a favourite chocolate bar.
