Mocha ice cream

Consider this your mid-afternoon wake-up call! A velvety chocolate ice cream laced with coffee.

Method

Mocha icecream

1.In a small jug, combine water and coffee, stirringto dissolve.
2.In a medium saucepan, combine milk and cream. Bring to boiling point on high. Remove from heat.
3.In a medium bowl, using an electric mixer, beat yolks, sugar and custard powder together until thick. Gradually beat in milk and coffee mixtures until smooth.
4.Return mixture to clean saucepan. Stir over low heat for 2-3 minutes until custard boils and thickens. Reduce heat. Simmer for 3 minutes. Add chocolate and stir until mixture is smooth. Remove from heat. Cover surface with plastic wrap to prevent a skin forming. Cool to room temperature. Chill until cold.
5.Transfer custard to ice-cream maker and churn. Pour into loaf pan, cover with foil and freeze.

✦ If preferred, use white chocolate and 1/3 cup toasted nuts of choice, or crumble in cookies or a favourite chocolate bar.
