1.Tuna sandwiches: Spread bread with butter. Combine tuna, cream cheese, celery and half the onion in a small bowl. Season with salt and pepper. Top 2 slices of bread with carrot, then tuna mixture. Top with 2 slices bread. Trim crusts. Cut each sandwich into 3 equal fingers.
2.Avocado sandwiches: Mash avocado roughly in a small bowl.Add corn, cottage cheese and remaining onion. Season with salt and pepper, stir to combine. Top 2 slices bread with pastrami, avocado mixture and remaining bread. Cut into triangles.
Cut into different shapes to create interest. Use leftover bread for croutons, toppings on pies and in puddings.
