Mixed prawn, crab and mussel paella

Mixed prawn, crab and mussel paella
  • 3 tablespoon oil
  • 1 onion, finely chopped
  • 2 clove garlic, finely chopped
  • 2 sticks celery, finely sliced
  • 1 cup rice
  • 2 cup hot chicken stock
  • salt to taste
  • 10 mussels
  • 10 peeled raw prawns with tails on
  • 170 gram can crab meat
  • 4 tomatoes, roughly chopped
  • 2 tablespoon chopped fresh parsley

    Heat oil in a large, high-sided frying pan. Add onion, garlic and celery. Cook, stirring, for 3 to 4 minutes. Add rice and stock and bring to the boil. Cook for 10 minutes. Taste a little and add salt if needed.

    Scrub mussels. Stir rice mixture and add mussels and prawns. Cover and continue to cook over a low heat for 5 to 10 minutes. Discard any mussels that don’t open. Stir in crab meat.

    Scatter tomatoes and parsley over paella and serve.
