Ingredients
Mixed berry clafoutis
- 300 gram frozen mixed berries
- 2 tablespoon blanched almonds
- 2 tablespoon plain flour
- 1/4 cup (185ml) milk
- 1/2 cup (110g) sugar
- 2 large eggs
- 1 tablespoon port
- 45 gram unsalted butter, cut into small pieces
Method
Mixed berry clafoutis
- 1Preheat oven to 200°C and grease a 5-cup gratin dish. Place berries in prepared dish and set aside.
- 2Process almonds and flour in a food processor or blender. Add milk, half of sugar, eggs and port. Blend until well combined.
- 3Pour batter slowly over berries. Dot berries with butter and sprinkle with remaining sugar.
- 4Bake for 30-40 minutes, until top is golden and batter has set. Cool slightly and serve warm.
Notes
Serve Mixed Berry Clafoutis with low-fat pouring cream if liked.
