Ingredients

Mixed berries with palm sugar crumbs
  • 1/2 cup unsalted pistachios
  • 1/4 cup palm sugar, finely chopped
  • 1/4 cup desiccated coconut
  • 1/2 vanilla bean, chopped finely
  • 400 gram greek style yoghurt
  • 125 gram raspberries
  • 125 gram blueberries

Method

Mixed berries with palm sugar crumbs

    Preheat oven 180°C (160°C fan-forced). Line a baking tray with baking paper.

    Put the pistachios, palm sugar, coconut and vanilla bean into a small food processor and blend until crumbs form.

    Put the crumbs onto the lined baking tray and toast in the oven for 10 minutes or until the palm sugar is beginning to melt and clump together.

    Serve the crumbs sprinkled over mixed berries with a dollop of yogurt.
