Mixed berries with palm sugar crumbs
- 1/2 cup unsalted pistachios
- 1/4 cup palm sugar, finely chopped
- 1/4 cup desiccated coconut
- 1/2 vanilla bean, chopped finely
- 400 gram greek style yoghurt
- 125 gram raspberries
- 125 gram blueberries
Method
Mixed berries with palm sugar crumbs
- 1Preheat oven 180°C (160°C fan-forced). Line a baking tray with baking paper.
- 2Put the pistachios, palm sugar, coconut and vanilla bean into a small food processor and blend until crumbs form.
- 3Put the crumbs onto the lined baking tray and toast in the oven for 10 minutes or until the palm sugar is beginning to melt and clump together.
- 4Serve the crumbs sprinkled over mixed berries with a dollop of yogurt.
Notes
Not suitable to freeze or microwave.
