Miso and sesame salmon with soba noodles
- 1/3 cup white miso paste
- 4 180 g salmon fillets, skin on, bones removed
- 1/3 cup sesame seeds
- 1 tablespoon soy sauce
- 2 teaspoon sesame oil
- 2 teaspoon lime juice
- 270 gram packet soba noodles
- 100 gram snow peas, blanched, thinly sliced
- 1 bunch chives, chopped
- 1 tablespoon oil
Method
Miso and sesame salmon with soba noodles
- 1Spread 1 tablespoon miso paste on skinless side of each salmon fillet. Sprinkle evenly with sesame seeds, pressing firmly. Set aside.
- 2To make dressing, whisk together soy sauce, sesame oil and lime juice, in a small jug. Set aside.
- 3Meanwhile, cook soba noodles in a medium saucepan, following packet instructions. Drain and rinse with cold water.
- 4In a large bowl, combine noodles, snow peas and chives. Drizzle dressing over noodles, tossing well.
- 5Heat oil in a large frying pan on high. Cook salmon, skin side down, for 3-4 minutes until crispy. Reduce heat to low. Turn fish and cook for a further 2-3 minutes, until cooked to taste.
- 6Divide noodles between serving bowls. Top with salmon to serve.
