Mini nacho cups

Easy-to-make and packed full of flavour, these bite-sized Mexican nacho cups are wonderful served as a vegetarian starter or as finger food at your next party.

Ingredients

Method

1.Place 4 small, microwave-safe dariole moulds or small cups upside down on a microwave-safe plate. Spray 4 wrappers with oil and drape 1 over each mould.
2.Microwave on high for 70 seconds, until lightly golden and bubbled. Repeat with remaining wrappers, to create baskets.
3.Fill baskets with a spoonful of beans. Top with sour cream and avocado. Serve with coriander leaves and lime wedges.
